Wake Up Muffins Recipe — A Toddler-Friendly Breakfast Option

Ingredients

Dry Ingredients:

  • 1¾ cups rolled oats, ground into oat flour (or use store-bought oat flour)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon

Wet Ingredients:

  • 1 cup cottage cheese
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1 tablespoon honey or maple syrup (optional)
  • ½ cup milk (dairy or non-dairy)

Add-Ins:

  • ½ cup chopped nuts or seeds
  • ½ cup fresh or frozen berries

Instructions

  1. Preheat the Oven: Set your oven to 175°C (347°F) and line a muffin tin with paper liners or lightly grease it.
  2. Prepare Dry Ingredients: In a large bowl, combine the oat flour, baking powder, baking soda, and cinnamon. If you're making oat flour from rolled oats, blend them in a food processor until they reach a fine flour consistency.
  3. Mix Wet Ingredients: In a separate bowl, mix together the cottage cheese, mashed bananas, eggs, honey or maple syrup (if using), and milk until well combined.
  4. Combine Wet and Dry Ingredients: Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined.
  5. Add Mix-Ins: Gently fold in the chopped nuts or seeds and berries.
  6. Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups.
  7. Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool and Serve: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve with yogurt and fresh fruit if desired.

Storage Tips
